I didnt go with the MacMini Server edition simply because the video card (when I got mine in April, things may have changed) used shared memory rather than it's own on-board. I wanted the best video performance. Also, MacMini Server with OSX Server on it is more (in my opinion) for people who are looking for a more affordable server for a small business scenario over going with a Microsoft solution. It is one I would look at for myself if I were to go into business for myself or had more than 4 computers to worry about. I use an app (there is a client version and server version) called Media Server. It will let you access your media from outside your network. I have it pointed to my iTunes drive. I don't use it often, but i have used it and it is satisfactory. the biggest issue with it is your upstream bandwidth from your house. Keep in mind, if your movie file is 1.5 GB, then that will be 1.5 GB of data you will use. I have the 64GB iPhone (mostly for music/audiobooks - I have over 200gb worth) and the 32Gb iPad and I only put a few movies/shows that I will want to watch, so even then, I dont fill up a ton of memory. It is all in how you use it.
