Burning audio CDs and DVDs

Folks--
I'm *fresh* into the mac world after a decade with Windows. I need help with the following two things in Tiger (on my Macbook Pro)
1. I need to create an audio CD with tracks from different CDs. Is iTunes the only option? (Also, with iTunes, should I convert the tracks to AAC, and then set the burn option to write in Audio-CD format?) If I go the itunes way, will there be any loss of quality?
2. I need to create an *exact* replica of a DVD-video. How do i do that? If I create an exact copy, will I get everything like the different sound formats (Dolby Digital, DTS etc etc) in the source DVD?

iTunes will work for you. You can add all music to the library and then create playlists to burn a cd. (any songs, any order, etc..)
As far as quality, there are different options. (AAC, Mp3, etc..) You can change the import quality to get the best sound.

As far as DVD's, there are a few options to try. I'm sure there are more, but these are the ones I know of.
