I'm a Windows to Mac newbie and have had my MacBook for 6 months. I'll never go back to Windows. Quick question, please:

Is there such a thing as a defragmenter for the Mac? Does a Mac even need defragging? I'm running Leopard. I just want to make sure the system is running at its best.

Are there any utilities I should consider? TIA.

Nope. One of the advantages of Mac OS X is that it does all that defragmenting stuff on it's own and in the background. Just leave it on for a few nights. Then turn it off (or sleep) when you need to transport it, but otherwise the machine will take care of itself.
