Would it ever be possible to get music of my iPod touch, since they have removed the "enable disk use" option.

The iPod Touch never had the option for enabling disk use.
I think you should still be able to rip the songs off your Touch. Search "iPod ripper" for several software options. This is, of course, a legal enterprise you have undertaken?
