OK. So I got a kernel panic and my mac mail happened to be open.

I restarted my computer as instructed etc. but when I opened my mac mail it opened as if I had never used it before though it had my name and email in the intro window (all I had to enter was my password). I did this but none of my mail or other mail boxes showed up.

My friend who tried to help me found the files from my old inbox (if that helps) but nothing is showing up in mac mail at all.

Does anyone know how I can fix this?

Sounds like you have set up a new Mail account. Go into Mail Preferences and see if there are two, or more, Mail accounts. If so delete the new one using the little (-) key at the left foot of the pane.

Sorry, I have a question. I keep hearing about "kernel panics" but have no idea what it is. Anyone explain it for me?

System lock up, requiring a reboot.
Hopefully, you'll never see one. But you'll know it if you do. You'll see a box on the screen telling you to shut down.
