I cannot choose 1280*720 24hz on my Mac Mini even though my Panasonic PT-AX100 eats that signal. How can I make my Mac Mini run 24hz ?

24Hz is very low. Should be over 50 at least I would have thought.
As long as you can get a rock solid sharp display at 1280 x 720 there shouldn't be any reason to mess with the hertz.

The reason to run 24 hz is because of most films run with 24 fps. This way there will be no jitter in the screen movement. Does anyone know how to get 24hz?

It depends on whether the graphics card can output at 24Hz though.
Are you getting any jitter though? How exactly are you getting an unsatisfactory display on your Panasonic?
