the please hold the power button message is called a kernel panic...ususally related to a hardware problem

Call apple about both issues. The fans may be because they need to be calibrated

Is it a G5 1.8? Did you update to 10.3.5?

This is a known issue on single processor 1.8 G5's.

I've heard of some problems with the new dual 2.5's on another website. You might want to run the Hardware Test CD suite to make sure everything is okay.

Either way, since you've only had it for a little while, you can call Apple for free tech support. (First 90 days) 1-800-APL-CARE
