Can't figure out how to uninstal software.

Also the screen turns off way too much.

How do I adjust this stuff? I'm working with a new macbook.

1) Drag the app from your applications folder to the trash.

2) Open up System Preferences - Energy Saver - and change the sleep options

To uninstall applications, simply drag the application from the "Applications" folder to the Trash.

For the screen, it sounds like your MacBook may be set to automatically go to sleep after a certain period of inactivity. Click on the yellow light bulb ("Energy Settings" or something like that) in "System Preferences" and you should be able to increase the time the computer stays idle before going into sleep mode.
