Add some of those iPhone apps they didn't include in the Touch, but would work just as well over wifi; like stocks, weather, etc. Then there's the 3rd party apps

Be careful though. According to one article I read, Jailbreak is completely dependent on a single exploitation of Safari that, if fixed by Apple would render it permanently and completely useless.

And that's why you don't update your firmware until an exploit is found in the new firmware ;P
