I am scanning documents from a HP 7300 and need to convert them to PDF to permit emailing. How do I accomplish this?

File>>> Print>>> Within the Print window that will pop-up, click "PDF" in the lower Left corner... from the drop-down menu that appears, select "Save as .pdf".

Perhaps you are referring to OCR, turning the scan into actual text?

You would need Acrobat Professional, or similar expensive package. The results usually suck.

If your using your scanner through Photoshop you can always save as.... PDF, but I agree with RIDE that would probably be your easiest way

Whats the point of saving as a PDF then? It's still bitmapped pixel data. You might as well save as compressed TIFF or JPG.

Agreed... I'm not sure why the OP can't email the .tiff or .jpg files.

I'm sure the OP could if he/she wanted to, but some companies like to be a pain in the backside, and refuse to do anything unless you send them what they want in the format that they want it....

maybe you could read into that as being, they've only been trained how to open pdf files, and have been told that anything else could contain a virus, and they will be held responsible... ;)
