RAID question

I want to RAID two 250gb drives together on my Mac Pro, do these have to be separate from my startup 250gb drive? Or can I RAID the startup drive with another? And what is the best RAID configuration?

20" iMac C2D 2.16ghz, 13" MacBook 2.0ghz, 60gb iPod vid, 1gb nano
You can only RAID drives that are identical with each other and completely formatted to begin with, so you can't include your startup disc

RAID0 would make it appear as if you have 500gb, but your data is incredibly vulnerable because if one drive goes you lose everything

RAID1 just mirrors the drives, so you would only have 250gb storage but if one drive failed your other drive would function.

You would need more drives to do RAID10 or RAID5
