You mean the Toolbar (the horizontal bar at the top) and the Sidebar?

For the Toolbar:

Right-click (or Control click) anywhere on the Toolbar and choose "Icon Only." (it is currently set to "Text Only")

For the Sidebar:

First, the items below the separator...

Go to your Home folder (which bears your account's short name; in the case of the 2nd picture you posted, "ppragados").

It should be at /Macintosh HD/Users/[account name]/
(Or alternatively: Go menu > Home)

All of the default folders are in there except Applications.

Just drag them back into the Sidebar. (note: In case you don't know, the Sidebar is merely a list of "shortcuts" to folders; dragging them in doesn't move the folders themselves in any way.)

Now, as for the Applications folder, it's at: /Macintosh HD/Applications/

As before, drag the Applications folder to the Sidebar.

Now, the items above the separator...

Go to Finder menu > Preferences...

Sidebar section

Check "Hard disks" and "Network"

Voilà.
