I feel like an absolute idiot, but I can't figure out how to change the color of the paper in Pages. Just opening up a simple blank page you would think it would be two-clicks to change the color of the paper I'm typing on, but I can't find anything anywhere aside from typing in a shape. I would appreciate any help...

Paragraph fill is an option,
Inspector > Text > More > Paragraph fill. Click on box as usual to bring up the colours.
You can also access it from the font menu as normal but it only colours the paragraph in pages but will colour the whole page in text edit etc. Just the way pages works.

Making a text box page size is another option....have fun
