How do I darken my fonts? HELP!!

This grey font is killing my eyes...how do I make the fonts darker? I would also like to know how the fonts selector menu, etc. works in Safari. There are so many buttons and I can't figure out how they work. There must be a help for it somewhere...

I discovered that if you press apple then + (plus sign) this makes the fonts bigger in mail and safari, which helps a little
