Just curious, are there any alternative desktop environments I could run on OS X. Just for the thrill of it?

Tons. Pretty much anything that is available for X11 (a la Linux) - WindowMaker, KDE, Gnome...
google for it.
Fink makes quite a few ported window managers available.

Ubuntu is the Linux OS itself - what's running underneath the GUI, not the GUI that you see.

For default Desktop Environments:

Ubuntu uses Gnome.
Kubuntu uses KDE.
Xubuntu uses Xfce.


There are more out there as well, but those are the 3 that Ubunutu utilizes.
