Changing Default Programs

I just got a new powerbook G4 and when i open pdf files it keeps using the OSX default program. How do i change it so pdf files only open with Adobe Acrobat Reader? In windows i could do it by file types, but i cant find anything like that on my mac.

20" iMac C2D 2.16ghz, 13" MacBook 2.0ghz, 60gb iPod vid, 1gb nano
Option + Click on a pdf file
Go to Open With
Select Other
Choose Acrobat and select apply it to all the other files

You can also use the Get Info window to change the default app for all file types (.pdf, .jpg, etc.)

Also if you want to change any of the default internet apps.. say http, https, ftp, etc etc then you can download a program called "More Internet" It's the best one for the job!
