Activity Monitor - % CPU usage

27" iMac 2.7GHz Core i5, iPhone 6, iPad Air 2, 4th gen Apple TV
I've never really checked activity monitor until PArallels gave me a reason to. One column head is % CPU, but it shows Parallels is using over 100. Since it's impossible to use over 100%, does this number actually represent MB of RAM used?

I tried duplicating this behavior, but couldn't. Would it be possible to see a screen shot?
