As you may know, last update of QT Pro brought "export for Apple TV option".
currently I use MediaFork to encode DVDs in H.264. After update I decided to give QT option a try. I encoded DVD first with MediaFork - 1000 kb/s, H.264.
then converted DVD to full quality DV (with cinematize) and used QT for export. QT will not let you set quality options for apple TV export (apparently apple thinks they know best - how sad). resulted video was at 1800 kb/s H.264. file size was almost double of that from MediaFork and the playback quality twice as bad.
bottom-line, do not bother using QT for apple TV export. It's just a waste of time.
