There has been so much discussion about the OPT+CMD+click keystroke to hide all open windows, I thought I would publish the below little list, which is larger set of "hide windows" tricks. All of these are courtesy of the Mac OS X Missing Manual book, which I read some time ago:
Hide All Open Windows:
OPT+CMD+H / OPT+CMD+[click any open area of desktop]
Hide the Current Window:
CMD+H / OPT+[click any open area of desktop]
Select Program from Dock, Hide All Others:
OPT+CMD+[click on dock icon for program]
Select Program from Dock, Hide Current Program:
OPT+[click on dock icon for program]
Enjoy!
