I downloaded Tinkertool so I could change the font and text size on headings of windows, etc... but as it states on Tinkertool, some of them won't be able to change... is there another program like Tinkertool that I can use to change the fonts and sizes of the text?

You need to buy Silk from Unsanity to change most of the fonts.

Do you have that installed, StretchR? ... And if so, do you know if it's possible to change the size of the text in the Finder Menu [ie: make it bigger] ?

I don't have it. I've tried the demo, but only some fonts work properly, so I didn't buy it. There might be something about it on the Unsanity support.

Ok, it's just that someone here was asking that very thing and I didn't realise that Silk might help .... never mind, thanks StretchR.
