Getting sound into the iMac Core Duo?

iMac 20" Core Duo
I'm more of a musician than a computer person. I've got some music on Dat tapes that I want to turn into MP3 files on my iMac. Can I use the S/PDIF cable from the digital OUT of the Dat machine (a Tascam DA-20MKII) directly into the audio IN of the iMac with going through an audio A/D interface, like M-Audio or a MOTU unit? Also, when they're finally in the iMac, can iTunes convert them to MP3 files? Thanks for any answer to these, possibly, oft asked questions.
