Can I use multiple local networks at once?

Your Mac's Specs
2.33Ghz Core2Duo MacBook Pro /// 2.2Ghz Core2Duo MacBook
On my PCs I have the ability to use multiple networks at the same time via different ports & hubs, ie. connecting to one network via Gigabit, another via 100T Ethernet, another via 802.11g. Is that an option with MacOSX? If so, how can I do it and not confuse the Mac as to what to use for the internet?
