total noob questions - display not remembering settings

sorry but haven't looked to see the os version yet. just got it today so must be
10.4 or 10.5. just brought home new mac pro today. plugged in two vga
monitors (via dvi to vga adapters) and a 30" large mac cinema display. trying
to set the two vga's as left and right screens with the cinema above them.
wanted the dock and menu bar on the left vga.

1. if i drag the menu bar (which i'm only sometimes able to do) to the place i
want it, it's back where it started on reboot. also, left vga monitor is not
recalling it's settings. if i go back to system prefs--->display, however, and
select 'detect monitors,' the monitor is correctly detected and the menu bar
snaps to where i'd tried to put it (the left monitor).

2. when i enter system prefs--->display and hover the mouse over a monitor's
aspect/resolution settings, the window jumps erratically, not all over the screen,
but vibrates vigorously.

3. the window instructions say to drag each display where i want it but they
seem to refuse to go there. the left and right are switched and refuse to be
dragged to the opposite sides.

4. when i select or hover the mouse in a monitor space a red border appears
to indicate the monitor selected but the red border does not correctly border
the screen, sometimes seeming to include parts of a border of another screen
and sometimes appearing as a broken line.

in an unrelated and undoubtedly noob issue, control-clicking the desktop
seems to zoom the desktop and allow it to be dragged around in some fashion.
this has the appearance of a feature to me but i can't figure out how to escape
it back to my normal desktop. tried holding other modifier keys while control-
clicking again, tried esc, can't figure it out
