Taking Notes on Macbook Pro

Hey guys- I have a quick problem. I use my graphite4 wacom tablet to take notes in class... im in college... and I was wondering, is there any good mac program where I can use my drawing tablet to take more than one page of notes (if i fill a page i can move on to a blank one), and be able to save it easily?

I have MS office 2004. If you select "Notebook" from the template menu you get a "sheet of lined paper". In the tool bar you can select a writing tool. This turns the mouse into a pen. I assume that it would work with a tablet. I don't know if it can translate handwriting into text though.
