Changing the fonts

You know how on a pc you can change the default font that is on the computer? (Like the font in system preferances and etc) Can you do that on a mac? If so, how?

It might seem a little odd that OS X doesn't let you do this itself, but I think it's because a large part of the mac experience is about UI consistency and usability - both of which are governed by strict human interface guidelines... (although apple likes breaking them every so often apparently - I'm looking at you iTunes 7 :))

Tinkertool is very cool... although I think it basically just tweaks hidden system preferences - it doesn't actually add anything itself.
