How does Unix and Macs store data

Your Mac's Specs
Imac G5, iBook, 60gb iPod Photo, iPod mini and two shuffles
At work today we were talking about hard drives and the need to defrag a windows hard drive because of how it stores the data in sectors with a reference to it so when you delete information it is still there and a defrag kind of sorts it all out.

We cant figure out how unix and macs manage to store data on a hard drive which doesnt require the defrag. We have asked a couple of people but nobody can give us an answer.

Anybody got an explanation?
