I have a 533Mhz single core PowerPC g4, currently it has a GeForce 2 Mx installed. Being an old pc guy, I have a lot of AGP cards lying around, question is, will pc AGP cards work in a mac?

No, not without reflashing the card's BIOS.
The electronics of a PC AGP card is the same, but the BIOS is different.

Any body know whether a 3dfx VooDoo 3 3000 is better than a GeForce 2 MX or not?

And if so, then how would I flash the bios using my mac?

I think voodoo cards are too old to be much use for 3D stuff anymore, stick with the nvidia card.

Also, I'll bet you need a bios from the manufacturer or a developer to flash into the card, may not be easy to find, or might not exist.

You'd need a second Graphics card (PCI) to see what you're doing while flashing the AGP card, and you need specific software to do it, and the right BIOS for the card.
This is not such an easy thing to do, and with the risk of killing your card...
