Dual 867Mhz MDD G4 Powermac, 800mhz G3 iBook, 1.25Ghz Mini, 40GB 4G iPod.
Just wondering if a nVidia GeForce FX5700 (AGP 8x) will run in a MDD G4 Dual 867, at all? I know it'll only be able to run at AGP 4x Specs, but surely that'd be better then the GeForce 2 MX that it has at the moment.

As far as I know, there is no Mac version of the GeForce FX 5700...

PC graphic cards don't work in a Mac, unless you can find a Mac version of that card's BIOS, and flash the card. As there has never been a FX5700 for Mac, there is no such BIOS file either.
Try to find an ATI Radeon 9800 or 9600 for Mac, on eBay. They work fine in the MDD, and are much better than the one you have now. And are also Core Image compatible, if you're running Tiger.

Like Avalon stated, the ATI Radeon 9800 Pro is the card to get for that machine. I have one on my Digital Audio and it FLYS. There are a few on Ebay.
