Entourage - Again

Having moved from Outlook on the PC to Entourage on the MAC I cannot find the TOOLS | ORGANISE feature in Entourage. More specifically, the colour coding of incoming messages (arranged by sender).

Can anyone tell me where, or how I find this feature? Or if it is actually available in Entourage.

To color code messages try this:

Go to Edit - scroll down to Catagories. The menu that opens should say Edit Catagories. Click on that and your email world will become a magical rainbow colored place.
