I'm wondering how often refurbished Minis show up at the Apple Store site. A few days ago, there were several at around 9pm. Most of them went pretty quickly, including the one I wanted, which was sold while I was entering my purchase info. I haven't seen anything since. Is there any kind of predictability for when they show up, or is it just a random occurrence where I'm just going to have to keep checking? Thanks.

As you found out, items in the Apple refurbished store go very quickly. All we can advise you is to keep checking and when you see something you like, jump on it.

Mac-Mini's seem to be a model that is in lowest supply (maybe highest demand as well). I visit the Apple refurb. area quite a bit. And the Mac-Mini's many times are out of stock.
Just like Craig's List…there are deals there all the time. But…something could be posted at 10am, sold by 11am, and the post removed by 11:30am. If a person checked at 8am…and 12noon…they would never see this deal.
Could be the same with the Apple refurb. area. If a person checked at 10am (nothing). 11am (nothing)…12noon some Mac-Mini's may become available & sold out by 1pm. The next time this person checks is 3pm (nothing). In this example the person checking would never see the Mini's available at 12noon. So some Mini's were available…but they were sold very quickly.
Just keep looking & keep looking often.
