When I opened my Pages app on my iPad today, there was a new note dated today. I did not generate the note. Is is also on my iPhone. It is entitled NOTE TAKING and consists of several lines of apparent Latin Phrases. HAs Icloud been hacked. Do I likely have Malware on my devices.

No, you haven't been hacked nor do you have malware. It appears it was a hint that you can now take and sync notes between your devices thru iCloud. The Latin lines are just for show. Pages and Word both do the same thing for templates. (Latin phrases for demo)

Did it look anything like the text here: http://en.m.wikipedia.org/wiki/Lorem_ipsum#Example_text? If so, that's called "Lorem Ipsum" text. It's Latin and often used a filler for a template or as "junk text." It's possible that this was added as a means of demonstrating something.
