Time machine retrieval

I have a number of folders for important email documents saved to my imac. The other day, I was copying them to the cloud when I discovered that not only did I mistakenly delete a folder from the apple Mail but also from my desktop as well. Luckily I have 2 back ups: time machine and another hdd. Never having to retrieve a mail folder before, I am wondering just how to do this. Any help would be greatly appreciated

Problem has been solved, but another question arises: there were 2 old email accounts ( an unused gmail and a live.pop) that showed in the mail folder of my user library. Are they there because once, long ago, there were used? Does time machine keep such inactive, empty folders?
