Can we pause Copying Function in Mac ??

Is there any possible way that we can pause the Copying Function in Mac while copying data from an external hard drive on Mac system.

Not that I'm aware of. You can, however, cancel the operation and do it when you have the time/patience.

Between USB3, SSDs and Thunderbolt this should be a non-issue with modern Macs.
