You can't easily mount the iPhone and read its contents as far as I know. You can set iTunes to backup your phone but the backup isn't stored on an external drive.

If you have iTunes set to make a backup it is in ~/Library/Application Support/MobileSync/Backup. Note that this pathname is inside your user account in the hidden Library folder. The folder names and their contents won't generally make sense. You could copy those files to an external drive but doing anything else with them would require external software.

How do I download/backup my iPhone 5s contacts to an external drive?

As Slydude pointed out, you can backup your 5s contacts and other data to your Mac, however, you can also backup to iCloud. Make sure you select "contacts" and anything else you wish to backup and/or sync by selecting them in System Preferences, iCloud. You have 5GB of free storage in iCloud.

Triple posting actually... one is enough, thanks.

And no one here even knows:
a) if you have a computer.
b) what operating system you might be using.

Plus, if you're backing up via iTunes &/or syncing your contacts on a computer and then keeping a backup of your system drive on an external (which everyone should be doing), then you already have a backup of your contacts on an external drive.
