Attachments in Mail

How can I just attach a file or photo to an email in Mail rather than have it appear in the body of the email?

Give these tips a quick read. If you are using the version of Mail that shipped with Maverocs ignore the Terminal command option.

Attachments ARE "just attached" in Mail. On OSX, they display inline as you noted. When they are received, they are either opened or not depending on the recipient's settings. If you don't want to see them when you send them, then in Mail, after attaching it, click once on the attached file, then right-click and choose "View as Icon."

Thanks for the hint, though I hope I won't need it for too long as I'm going to go back to Outlook 2011;)
