My wife's iMac is a little older and has a 250GB HDD (of which, 230GB's are used). I used "WhatSize" to find the largest files on there to see if there were any files that she didn't need and I could just delete. Most of them, however she does need. However, I see under Library>Application Support>MobileSync that there is a 106 GB Folder with many "Document" subfiles.

Can it copy this to an External HDD and delete it from her iMac's HDD without any repercussions?

Those would be the iPhone, iPad backups. It's best to delete them from within iTunes. Am thinking from there, you can delete individual (old) backups and keep the newest for each device.

Here's a walk through with pics.
