increase font size in Activity Monitor ?

Try Tinker Tool for the Mac. It's free and has an option to set font sizes although I'm not sure it will work for the Activity Monitor. But since it's free and can be used for many other things as well, it's worth looking at. The download link is here.
Another way to increase the font in Activity Monitor would be to lower the resolution of your display but that will likely result in some distortion.

I have downloaded and installed TinkerTools System 2 on an evaluative basis for now.
I see, however, that this will probably not do what I want based on some notes on
issues with this app at bresink.com/osx/0TinkerTool/issues.html .
