I have a Mac Mini set up as a media server, with the music files stored on an external drive to minimise noise. Now I would like to simple procedure that I can back up this itune library onto a Synology NAS on the same network. I do not want Time Machine as the Mini is a simple media server with infrequent new records added to the iTune library.

You could use something like Sync Folders on the Mac App Store. That copy the whole thing across and then only ever sync changes
