Spell checking

Can anyone assist with a spell checking query on MacMail? When sending an email my spell checker checks not only my text but that of the attached text of the email to which I'm replying to. In Mail preferences there does not appear to be any opt out of this process.

Mail preferences, under "Composing" I have mine set to check spelling "as I type." That seems to tell it not to check anything I attach, as I am not typing that attachment.

My copy of MacMail keeps changing "ex-gf" to "ex-bf". This is most inconvenient, especially when I am e-mailing my mother.
