Although there is an option in Mail Preferences under Full name it is 'greyed' so that I can't change how I appear to recipients.

Is there a solution or am I stuck with the name associated with the e-mail address?

Which email provider are you using? I use GMail and my "Full Name" can be changed. However, changing it from the Apple Mail app probably is not a good idea unless you also change it at your provider's web mail server address.

Problem solved.

The solution is to be found in Apple ID. If you put the name that you want to show in e-mails as first name followed by surname that's what will appear.
