I have 6 active accounts in my Mail.app. During my work day (and I work most days), I would like for my non-work accounts (which are all but one) to stay offline. Anyway I can set certain accounts to stay Offline by default upon launch so I don't have to manually take all but one offline? I guess the workaround is just never quit Mail and keep my machine on, but...

I think you can just tell Mail not to check for mail for those accounts. Go to Preferences > Accounts > Choose a non-Work account > Advanced > uncheck "Include when automatically checking for new messages".

If you want to get mail for those accounts, go to Mailbox menu > Get New Mail.

This is all untested, but it sounds good in theory :)
