how do I get out of full screen mode/ projector mode?

Kind of hard to say...since you didn't mention what application (or if you're talking about the OS itself)...but hitting the "Escape" Key (esc) usually does it.

Or move the cursor to the top of the screen where the menu bar will reappear and click the arrows button at the right hand side.

Native full screen mode is exited just as bobtomay notes. Projector mode would be an application specific function and consequently, you'll need to exit this using the shortcut of that particular applications.
