how do you transfer datas( message, contacts ) to itunes

Plug in your iOS device. Select it from the column on the left (click on it once). Go through the various tabs in the main display window and decide what you want synced. Contacts, apps, music, etc.
Click "Apply" on the bottom right and every time you connect to iTunes (plugged in or wirelessly depending on your version of iOS), it will sync all that stuff automatically.
Regularly back up your iOS device to your computer through iTunes in case of a need to retrieve or revert. I believe that is also done from the main display window - I'm not on my Mac right now.
