Word 2011 hidden formatting?

I'm working with a template given to me by my work, and I've had to redo the formatting of the table and fonts etc. but still I get weird things happening - like after I delete a section the font will automatically change to Times, 12, italics, or when I'm doing a numbered list sometimes when I press enter at the end of a line it won't start another number and will change to font Times, 12.

Is there some hidden formatting I'm not seeing? I've tried the 'Show all nonprinting characters' button but it doesn't reveal anything.

That's the way templates are designed. The template is likely pre formatted with certain fonts, lists, and what other graphics it contains. If you have a copy of the basic template print it out first. Then you can change it and save it with whatever fonts, tables, graphics, you desire. There is no hidden formatting.
