For Mac Mail:

Open Mail preferences, click on "Fonts & Colors". Now choose a font. Say you choose Helvetica. Click on the "T", and click on the color wheel to select a color that you wish to use in your reply.

Other mail applications such as Thunderbird are different in the way you would choose a color font. You can experiment though.
