All my apps that were used before shutdown , come up as start up items. Going to users & groups and hiding the apps doesn't help. In most cases I have to close 10 or so apps at start up.

Are you quitting the apps before you shut down? If not, then they are opening back up as a result of Lion's feature to automatically re-open apps that were in use when you shut down. Read this for tips:

Also, using the "hide" option in Login Items doesn't stop an app from loading on login. It hides the app's window, but it still opens in the background. You'd have to remove the entry entirely if you don't want it to load on every startup.
