Download the 10.7 iTunes DMG file and then download Pacifist to allow you to look inside the iTunes DMG file. You will find the installer PKG file there. Run that to overwrite your iTunes 11 installation.
Now go back to Time Machine and restore your iTunes library from before your iTunes 11 installation to get back the older version that will work with 10.7.
Obviously, make sure your backup is up to date before you try any of this..
I wouldn't care if I had to recreate my entire library. Yes, that's how unhappy I am with the new iTunes. Everyone that worked on that new iTunes video talking about how great the new iTunes is, should be caned.
