Adium is a multi-protocol client that supports a lot of services, except Skype. Check out https://imo.im/ which is a browser based client that does support both Skype and GTalk, and also Trillian for Mac
Looks like there aren't that many 3rd party clients for Skype being a closed protocol. The SkypeKit is supposed to allowed for more 3rd party development..but there aren't that many out there..
