Opening Outlook instead of Apple mail

When I visit a web site and click on their "contact us" button, I'm given Apple's mail system to send my message from instead of Outlook.

How do I make that change? I know the answer is somewhere within Mail preferences but don't have a clue from there.

Any advice will be greatly appreciated.

I am using the new version of Outlook that Microsoft released on August 1, 2012. Since I am using it as a web based service, and do not actually have Outlook on my computer, I am out of luck. I have to live without being able to click on a site's E-Mail link or contact us button. Prior to 8/1/2012 there was a way to do it.
