Notepad on iPad sends notes to my moms email!!!!

If your mom and you are on the same account and you use iCloud then yes it will transfer your notes to all on the same account.

If you are on the same iCloud Account, you can still turn off Notes syncing using Settings, iCloud, and uncheck "Notes".
